Delicious “Hiroshima sake” is brewed under the four conditions of [rice, water, skill, and weather]. Water found in Hiroshima had the characteristic of being “soft water containing few minerals that would become nutrition for yeast.” At the beginning of the Meiji Period, a “soft water brewing method,” which was said to be nearly impossible at the time, was successfully developed by Senzaburo Miura, who is known today as the “Father of Ginjo Sake.”
Since then, the Hiroshima-style “soft water brewing method” has been the traditional skill of Hiroshima toji (chief brewers), and is essential in the gentle yet rich tasting smooth sake that “Hiroshima sake-making” is known for.
Due to the limited space of the exhibition, we introduce only seven of the 49 brewers in Hiroshima Prefecture.

■“Junmai Gjinjo Maboroshi”…A simple, deep-flavored sake brewed with Hattan Nishiki.
