Established in 1927, in our pursuit of “delicious vinegar,” we carefully select ingredients and have continued to make seasonings using natural underground water.
Seeking good quality water, which is essential for vinegar-making, we established a factory in the mountains of the northern part of Hiroshima City, a place rich in nature. All of our products are made from carefully selected soft natural water of pH 7.
Seeking prospective production sites and producers of raw ingredients, our President personally visits each location to conclude purchase contracts. We purchase only natural ingredients made from the heart by domestic outsourced farmers after hearing about the producer’s way of thinking (philosophy). We never use any chemical seasonings or artificial preservatives.
We place top priority on health and make safe food products.

“Rice vinegar”
Manufacturing “Rice vinegar” requires manpower and time. First, we make moromi (unrefined sake) from koji (malted rice) that is made by washing and steaming rice and water, and then we make this into sake. Next, we add acetic bacteria to this pure rice sake and after carefully fermenting it for more than four and a half months using the static fermentation method, it is finished by adding natural underground water. Its well-rounded aroma and mild acidic taste make for a vinegar that really is equivalent in quality to Daiginjo sake. This is pure rice vinegar made from 100% rice with no additives.
